East Cape Oyster Co., Gifted Growers
East Cape Oyster Co. was founded by Phil Enserink in 2015. The oyster leases were purchased from Tommy Joe MacDonald who has farmed in Souris River since the early 1980's. Tommy is now 75 years old and still actively involved in the company on a day to day basis. Although East Cape Oyster Co. is a relatively new farm, the leases in Souris have a rich history of growing some of the highest quality oysters on the island.
The Gritty Details:
Oyster seed is collected from a wild oyster bed which has natural growth every year. Seed is deposited on bottom of the Souris River. Cultivation 4-6 years.
Flavor Influenced by:
- Salinity: 3.2% < 3.5% full oceanic salinity
- Tides: 2 large tidal flushes of ocean water per day, fed by fresh water estuaries
- Bottom Makeup: Hard packed red clay
