The ROC Farm

Rob and Sims fell in love on a boat: He's her sailor, she's his valentine. They learned the history of Sailor's Valentines after they were married, and it's been a theme in their life ever since. There's an undeniable romance to the sea and to the sailors who answer its siren call. Imagine risking life and limb to sail the high seas, away from your lover or mama for ridiculously long periods of time: there's no Skype or Snapchat. Enter the Sailor's Valentine: Gorgeous shell mosaics in octagonal-shaped boxes. Some sailors lovingly crafted these Valentines (with sentimental messages: Be mine), but many snapped them up in Barbados from 1830-1880, the last port of call for American and English ships. 

The Gritty Details:

2mm seed is upwelled in May-July and then placed in nursery bags until early winter. Wintered over in bags on the bottom, then re-tumbled and planted directly on the tidal flats in late spring. Handpicked at low tide or dragged during higher tides. Time to market: 2.5 to 3 years.

Oysters, Cool

Oysters like to be kept cool. Store them in the fridge!

When serving ~ a nice bed of ice, but do not let them sit in water—it's not good for them.

If storing in a cooler, make sure the cooler can drain.

Most of the time, oysters stay fresh in your fridge for 7-10 days.

How to Shuck

It's a shuck 'n rite of passage. You're in the cult now.

Watch this simple tutorial. And follow these easy steps.

  • Wear protection.
  • Insert knife into hinge at 45° angle and twist until it pops.
  • Slide the blade across the top shell to detach.
  • Slide/scoop the blade under the oyster to cut the lower adductor free. Go forth and shuck!

The "R" Month Rule

There used to be cautionary tales about eating oysters in the warmer months. When refrigeration and scientific testing were not as prevalent, the "R" rule cautioned against eating oysters in warmer months without an "R," May, June, July and August.

It's true that warmer water temps can foster algae blooms, red tides, and higher counts of vibrio (a naturally occurring bacteria in the ocean), which explain the avoidance rule.

However, the commercial shellfishing industry has strict regulations around closing warmer water areas to take precautions against potential food borne risks.

In the summer, we only curate from colder year-round waters, such as Maine, Duxbury Bay, and Canada.
