Harpswell, Maine

This is the last week for Belon season: please only order for last week in May- June 5. Belons, also known as European Flats, were brought over from Europe in the 1950s, and since then have grown wildly in the waters of Maine. Our Belons are harvested by divers even during the winters. Contrary to popular belief, Belon Oysters are not that uncommon. Most people either love them or hate them, but a true oyster connoisseur will learn to appreciate them.

The Gritty Details:

Seed is grown to 2 inches in floating bags and then planted on the bottom. Colder water slows growth, but enables a harder shell. Time to market: 3 to 4 years.

Flavor Influenced by:

  1. Salinity: 3.0% < 3.5% full oceanic salinity
