Let the good times roll ~ Mardi Gras Trio

Get decadent 

Nothing beats a gaggle of oysters preening on their half-shells, but for Mardi Gras...let's get decadent. As they say in Louisiana, laissez les bon temps rouler ~ let the good times roll.

After all, New Orleans created the famed Oysters Rockefeller, Oysters Bienville, and the Po' Boy, aka "the peacemaker" because carousing husbands used to present them as peace offerings to their wives.✌️

You don't need to cook for hours. Crank some jazz, grate some parm, throw in some heat, and a little decadence will be yours. 

Baked Oysters with a Kick

Mix finely grated parmesan with
A bit of softened butter
Minced fresh parsley
1/4 tsp. crushed red chili flakes
A bit of minced garlic + scallions
Lemon zest + lemon juice
Spritz of Tabasco + Worcestershire,
Pinch of kosher salt, and freshly ground black pepper, to taste.

  1. Spoon about 1 tbsp. butter mixture over each oyster 
  2. Bake until the edges of the oysters begin to curl slightly, about 5 minutes. Serve with baguette or toast points to soak up the extra jus.
