Point Judith Salt Pond, Rhode Island10 count
$ 46.00

There's something magical about Moonstones, maybe because they're grown in a salt pond, maybe because their complexity draws you into musing on their myriad flavors: It's subtle alchemy. Rowan Jacobsen (Oyster Guide) says it sublimely:  "What jumps out at you is that full-body; the taste fills your mouth with minerals and brothy umami richness. Copper, iron, clay—it’s all there. In fact, the stony, tannic flavors can make some wines taste almost bitter; your best bet is something exceedingly dry and simple, like Muscadet or Chablis, or a martini."

Cedar Island Oyster Farm, Family Farming at its Finest

Cedar Island Oyster Farm is a family-run farm. Tending the farm certainly keeps John and Cindy West busy. They balance work with family time by taking their daughters to work with them during summer months and over weekends during the school year.

"For me, working outdoors and having a connection with the pond is wonderful. As a farmer, it’s very fulfilling to teach the next generation the value of sustainable farming and how we can positively impact the environment. We treasure the time we share while working the farm alongside our daughters. In so many ways, it is a great fit for our family."  –Cindy West

FAQ

Oysters, Cool

Oysters like to be kept cool. Store them in the fridge!

When serving ~ a nice bed of ice, but do not let them sit in water—it's not good for them.

If storing in a cooler, make sure the cooler can drain.

Most of the time, oysters stay fresh in your fridge for 7-10 days.

How to Shuck

It's a shuck 'n rite of passage. You're in the cult now.

Watch this simple tutorial. And follow these easy steps.

  • Wear protection.
  • Insert knife into hinge at 45° angle and twist until it pops.
  • Slide the blade across the top shell to detach.
  • Slide/scoop the blade under the oyster to cut the lower adductor free. Go forth and shuck!

The "R" Month Rule

There used to be cautionary tales about eating oysters in the warmer months. When refrigeration and scientific testing were not as prevalent, the "R" rule cautioned against eating oysters in warmer months without an "R," May, June, July and August.

It's true that warmer water temps can foster algae blooms, red tides, and higher counts of vibrio (a naturally occurring bacteria in the ocean), which explain the avoidance rule.

However, the commercial shellfishing industry has strict regulations around closing warmer water areas to take precautions against potential food borne risks.

In the summer, we only curate from colder year-round waters, such as Maine, Duxbury Bay, and Canada.

Foodborne Allergies

Of course, it goes without saying, but we have to say it: be careful of food borne allergies, which can affect all raw fish, poultry and seafood.

About us

Oysters are like Wine

We curate from over 100 farms across North America, connecting you to the widest selection on the interwebs.

Oysters take on the flavors of the water, sand and mud in which they're grown. This is their "merroir."

Our Story

Founders, Sims + Rob started their oyster adventure with a family farm in Duxbury, MA.

The ROC Farm grows our our flagship oysters ROC Reserve, Sailor's Valentine, and Goose Flat.

Where Oysters + Culture meet

There's Blüe Oyster Cult (more cowbell!)

And in oyster farming there's "bottom culture," "off bottom" - "intertidal culture," "rack and bag culture"....a whole lot of culture, too.
