Souris River, PEI, Canada
Sand Dunes are a show-stopping mouthful of brine and butter. They'll convert an oyster virgin and seduce the oyster lover. This jade-shelled beauty is grown "on bottom" of the Souris River in PEI and is fed by two oceanic tidal changes and fresh water estuaries. Mind-blowing.

East Cape Oyster Co., Gifted Growers
East Cape Oyster Co. was founded by Phil Enserink in 2015. The oyster leases were purchased from Tommy Joe MacDonald who has farmed in Souris River since the early 1980's. Tommy is now 75 years old and still actively involved in the company on a day to day basis. Although East Cape Oyster Co. is a relatively new farm, the leases in Souris have a rich history of growing some of the highest quality oysters on the island.
