fresh mint leaves
1/8 cup sugar
1/4 cup bourbon
- Cook 1 1/2 cups water, mint, and sugar over medium-high heat, stirring occasionally until the sugar is dissolved. Strain through a fine-mesh strainer, pressing on the mint to extract all the juices. Let cool completely.
- Stir in the bourbon, and pour into a glass or metal pan. Cover and freeze overnight.
- Scrape the surface of the ice with a fork in long, light strokes to create a snowy texture. Break up any lumps. Freeze the granita again for at least 2 hours before serving.
- Add a dollop to oysters right before serving.
