Puget Sound, Washington
Wildcat Cove is a breathtaking spot that grows a wowza oyster. A little gem of an alcove where Little Skookum meets Totten Inlet, there's plenty of water exchange, phytoplankton + zero boat traffic. Sigh. Heaven. The bag-to-beach cultivation, tide tumbling and rich environment sculpt a fluted, horned shell brimming with plump meat and laced with a delicate vegetal flavor and sweet melon-rind finish.
