Truro Pearl Oysters, Health in Farming

Dan Smith started his career in healthcare in radiology and then later rose to be COO of a large health system before founding a health care consulting company. Dan has long had an interest in aquaculture and, with the help of some friendship and mentorship from a fellow grower, ventured into oyster farming several years ago. Today, he lives in Truro with his wife (they have a daughter in college).  Dan proudly markets Truro Pearl Oysters and plans to expand his operation.

The Gritty Details:

Floating bags are used for the spring and summer months. In the fall, the oysters are brought in and transferred to bottom cages and later pulled out of the water to store in a refrigerated warehouse over winter.

Flavor Influenced by:

  1. Salinity: 2.9% < 3.5% full oceanic salinity
  2. Tides: Large tides with significant nutrient inflow from nearby brackish Pilgrim Lake.
  3. Bottom: Sandy bottom, yields clean shells
