North Lake, PEI, Canada

Swept away on North Lake is the title of this track. The water's rough and the ocean surges twice daily: it's no picnic cruise. The wind whips your hair as you inhale the salt and the sea, but you've never felt so alive. This is Northern Belle: Open ocean flavor with a crisp brine, melding into a soft mushroom umami finish. Get swept away on North Lake. No regrets.

East Cape Oyster Co., Gifted Growers

East Cape Oyster Co. was founded by Phil Enserink in 2015. North Lake is the northernmost oyster lease on the eastern side of PEI. The Harbor is famous for its massive spring lobster catches as well as being the bluefin tuna capital of the world. The water in North Lake is often rough and choppy as it is exposed to the northern coastline. Since the cages are getting bashed around all the time, it seems to encourage a deep cup and consistent shape. The large tidal swings give us a fresh flush of ocean water twice a day and provide plenty of new nutrients for the oysters.

The Gritty Details:

Grown in floating cages in North Lake for the majority of their life, finished in bundles closer to the shore.

Flavor Influenced by:

  1. Salinity: 2.7% < 3.5% full oceanic salinity
  2. Tides: 4-6 ft. tidal range of nutrient-rich waters
  3. Bottom Makeup: Sand and Clay
